100 gms unsalted butter
50 gms powdered sugar
150 gms all purpose flour
Pinch of salt
Directions
- In a large bowl, whisk the sugar and butter together until smooth and combined.
- Add the flour in two parts. Fold it into the dough with a spatula. Add the salt and mix well. You could form it into a ball with your hands.
- Flour your work surface and roll out the dough to half an inch thickness. The dough will be slightly sticky but this is normal.
- Using a circular cutter, cut out discs and lay it on a baking sheet.
- Bake at 150°C for 15-17 minutes or until the cookies are a pale golden colour. Let it cool completely.
- If you do wish to use these cookies as a cookie sandwich, you could stuff them with nutella/peanut butter with chocolate chips etc. Enjoy!
