Paneer Kathi Roll

Delicious street snack – soft paneer in a tikka marinade drizzled with green chutney and sliced onions finished with a squeeze of lemon all wrapped in a warm paratha. For this recipe, I will be sharing how to make the filling and chutney.

Ingredients

  • TIKKA MARINADE –
  • 6 tablespoon thick curd

  • 1 tablespoon ginger garlic paste

  • 1/4 tsp ajwain (carom seeds)

  • 1/2 tsp turmeric powder

  • 1 tsp red chilli powder

  • 1/2 tsp coriander powder

  • 1/2 tsp cumin powder

  • 1 tsp chaat masala

  • 1 tsp garam masala

  • Squeeze of lemon juice

  • 200 gms paneer (cottage cheese) – cubed


  • VEGETABLES
  • 1 green capsicum – sliced

  • 1 onion – sliced

  • GREEN CHUTNEY
  • 1/4 cup coriander leaves

  • 1 green chilli – sliced

  • 1 tsp ginger garlic paste

  • 1 tsp chaat masala

  • 2 tbsp thick curd

  • 1 tsp salt

Directions

  • To start with, toss the cubed paneer along with the spices, curd and lemon. Mix well, cover and let it rest for 15 mins.
  • To make the green chutney – add the coriander leaves, ginger-garlic paste, sliced green chillies, chaat masala, curd, and salt to a blender and blend.
  • If the chutney is too thick, thin it out using water. Keep aside to be used later.
  • Heat 3tbsp of oil in a pan and add in the marinated paneer. Let this saute in the pan for 7-8 minutes or until the paneer takes on some colour and the masalas stick onto the paneer. Do not overcook the paneer as it will become dense and hard.
  • Add in the capsicum and mix well with the paneer. Keep stirring for 10 minutes till the capsicum is soft and begins to take on some colour. Keep aside for assembly.
  • To assemble the roll –
    1) Warm a paratha on a flat skillet/tava till it turns golden brown.
    2) Place the paneer tikka filling in the centre.
    3) Spoon some of the green chutney onto the paneer and finish with the sliced onions and a squeeze of lemon.
    4) Roll and enjoy!
