Ingredients

  • 5 medium sized potatoes – peeled and sliced

  • 2 tbsp salted butter

  • Handful of spring onions and fresh basil leaves

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 cup whole milk

  • 1 cup heavy cream

  • 1/2 cup / 4 cubes cheese (cheddar) – grated

  • 1 head of garlic

Directions

  • Heat butter in a pan and add in the fresh herbs. Sauté for a couple of minutes.
  • Add in the milk and cream. Season with salt and pepper. Let this come to a steady boil.
  • In a baking pan, spoon a thin layer of the cream mixture. Layer with sliced potatoes. Repeat this until the potatoes are complete.
  • Finish with a layer of the grated cheese. Toss in the garlic pods with skin.
  • Drizzle the olive oil and bake at 160°C for 40 minutes.
  • Serve hot and enjoy!
