My absolute favourite pasta dish – spaghetti enveloped in the fiery flavour of chilli and garlic.
Spaghetti Aglio E Olio

200 gms uncooked spaghetti
8 cloves of garlic – sliced
2 dried red chillies – chopped
4 tbsp olive oil
2 tsp salt
1 tbsp parmesan cheese
1 tbsp red chilli flakes
Fresh herbs – parsley/basil for garnish
Directions
- In a large pot, boil water with a tsp of salt. Once it comes to a rapid boil, add in the spaghetti and cook for around 15 mins or until the spaghetti is al dente (cooked through but still slightly firm to the bite). Drain and set aside for later.
- In a pan, heat the olive oil and add in the sliced garlic and chopped dried red chillies and red chilli flakes. Sauté for 2-3 mins or until the garlic turns golden brown.
- Add in the cooked drained pasta to the pan. Stir until well combined. Season with a tsp of salt.
- Serve hot. Garnish with parmesan cheese and fresh herbs. Enjoy!
