Strawberry Cheesecake Popsicles

Ingredients

  • 100 gms cream cheese

  • 50 gms digestive biscuits

  • 25 gms unsalted butter (melted)

  • 3 tbsp powdered sugar

  • 1/2 cup heavy cream

  • 1/4 cup whole milk

  • 1/4 cup water

  • FOR THE STRAWBERRY SAUCE
  • 7-8 ripe strawberries

  • 3 tbsp powdered sugar

Directions

  • To start with, blend the strawberries along with the sugar until smooth. You may add in more sugar if the strawberries are too sour. Set aside to be used later. You could also strain this to remove the seeds however this is optional.
  • Whisk together the cream cheese, heavy cream, milk, sugar and water until combined. The mixture should be smooth. Set aside to be used later.
  • Crumble the digestive biscuits into a fine powder. Mix in the melted butter until well combined, this mixture should resemble fine wet sand.
  • To start layering the popsicle, you could do them a couple of different ways :

    1) Slice strawberries and place inside the walls of the popsicle mould. Pour in the cream cheese mixture and place your ice cream stick and let it freeze for an hour. Lastly, finish with a thick layer of the digestive crumb mixture, pat down into an even layer and let it chill again. Drizzle strawberry sauce and enjoy!

    2) Swirl in the strawberry sauce into the part of the cream cheese mixture creating a marble effect. Pour into the mould and place an ice cream stick and freeze. Lastly, finish with a thick layer of the digestive crumb mixture, pat down into an even layer and let it chill again and enjoy!

Notes

  • Just have fun with the layering process – you could also drizzle some of the sauce into the inner walls before pouring the cream cheese mixture.
