Vegetable Bake

- BECHAMEL SAUCE
4 tbsp butter
2 tbsp all purpose flour
2 cups whole milk
1 tsp cinnamon powder (optional)
Salt to taste
1 tsp pepper
1 tsp chilli flakes
VEGETABLES REQUIRED3 carrots – diced
10-15 green beans – diced
1/2 cup cauliflower florets
1/4 cup peas
2 boiled potatoes – mashed
1/2 cup cheddar cheese – grated
Directions
- Steam the carrots, green beans and cauliflower florets in a steamer until soft – not too mushy.
- Heat butter in a pan and add in the flour once the butter has melted. Keep whisking continuously on sim until it resembles a thick paste. Do not let this brown.
- Add the milk to this paste, stirring constantly – bring this to a boil. Keep whisking to remove any lumps in the mixture.
- Once the sauce is smooth, season with salt, pepper, cinnamon and chilli flakes.
- Toss in the steamed vegetables and mashed potatoes into the bechamel sauce and mix until combined. Add salt to taste.
- Transfer this vegetable bake mixture to a buttered baking dish and finish with a layer of cheese.
- Bake at 170° for 15 mins or until the cheese starts to melt and turn golden brown.
