Ingredients

  • BECHAMEL SAUCE
  • 4 tbsp butter

  • 2 tbsp all purpose flour

  • 2 cups whole milk

  • 1 tsp cinnamon powder (optional)

  • Salt to taste

  • 1 tsp pepper

  • 1 tsp chilli flakes


  • VEGETABLES REQUIRED
  • 3 carrots – diced

  • 10-15 green beans – diced

  • 1/2 cup cauliflower florets

  • 1/4 cup peas

  • 2 boiled potatoes – mashed

  • 1/2 cup cheddar cheese – grated

Directions

  • Steam the carrots, green beans and cauliflower florets in a steamer until soft – not too mushy.
  • Heat butter in a pan and add in the flour once the butter has melted. Keep whisking continuously on sim until it resembles a thick paste. Do not let this brown.
  • Add the milk to this paste, stirring constantly – bring this to a boil. Keep whisking to remove any lumps in the mixture.
  • Once the sauce is smooth, season with salt, pepper, cinnamon and chilli flakes.
  • Toss in the steamed vegetables and mashed potatoes into the bechamel sauce and mix until combined. Add salt to taste.
  • Transfer this vegetable bake mixture to a buttered baking dish and finish with a layer of cheese.
  • Bake at 170° for 15 mins or until the cheese starts to melt and turn golden brown.
