Ingredients

  • 300 gms Noodles (I used this – https://masterchow.in/products/udon-noodles)

  • 3-4 tbsp finely ground dried red chillies

  • 1 1/2 tbsp dark soy sauce

  • 3 tbsp finely chopped spring onion bulbs

  • 1 tbsp finely chopped spring onion leaves

  • 1 tbsp minced garlic (would recommend adding more if you like garlic!!)

  • 3 tsp honey

  • 1 tsp vinegar

  • Salt to taste

  • 1/4 cup sesame oil

  • 3 tbsp roasted peanuts

  • 2 tsp sesame seeds (black and white)

Directions

  • Start by heating water in a large stockpot and once it comes to a boil, add in the noodles. Check the noodles after 10 minutes to see if they’re done cooking. (Cooking time varies depending on the kind of noodles you’re using)
  • In a separate bowl, add the ground chilli flakes, soy sauce, vinegar, honey, minced garlic, and spring onion bulb and leaves. Give it a mix and add salt according to taste.
  • Once the noodles are boiled, drain and set aside.
  • Heat the sesame oil and add it the mixed ingredients for the sauce. Be careful while doing this step as the oil will rise up while adding it to the bowl.
  • Add the boiled noodles to the prepared chilli oil and mix gently until the noodles are coated.
  • Lastly garnish with toasted sesame seeds, spring onion leaves and peanuts. Enjoy!Chilli OIl Noodles

Notes

  • You could also add some vegetables or ground meat to this dish. I’ve used Bok Choy, but mushrooms and carrots would be great too!
  • Vinegar- I’ve used rice wine vinegar but black vinegar would be great as well, just no balsamic!
