Ingredients

  • FOR THE MUFFIN
  • 1 cup all purpose flour

  • 6 tbsp whole milk

  • 1 cup apple – peeled u0026 diced into cubes

  • 1 egg

  • 3 tbsp packed brown sugar

  • 60 gms unsalted butter – melted

  • 3 tbsp powdered white sugar

  • 1/2 tsp baking soda

  • 1 tsp cinnamon powder

  • Pinch of salt

  • FOR THE CINNAMON CRUMB
  • 1/2 cup all purpose flour

  • 4 tbsp unsalted butter

  • 1 tbsp cinnamon powder

  • 1 tbsp powdered sugar

  • 1 tbsp packed brown sugar

Directions

  • Preheat the oven to 190°C. Prepare a muffin tray by lining it with paper cups. This recipe makes 5-6 muffins, double the recipe as required.
  • In a large bowl, whisk together the melted butter, brown sugar and powdered white sugar. Whisk until well combined.
  • Whisk in the egg and milk until combined.
  • Fold in the flour, baking soda, salt and cinnamon powder. Makes sure the flour is folded well, there should not be any streaks of flour in the batter. The batter will be slightly runny.
  • Lastly, fold in the diced apples and scoop them into the paper cups. Fill each cup with 1/2- inch to spare. Set aside.
  • For the Cinnamon Crumble – Add flour, cinnamon powder, brown sugar and white sugar to a bowl, whisk well. Pour in the melted butter and rub with your fingers gently until a crumb is formed.
  • Sprinkle the cinnamon crumble generously onto the muffin batter. Bake for 18-20 minutes.
  • Let it cool completely and enjoy with salted caramel.
