Biscoff Stuffed Chocolate Cookies

1/2 cup Biscoff spread
1 cup + 2 tbsp all-purpose flour
1/4 cup + 2 tbsp cocoa powder
1/2 tsp baking soda
Pinch of salt
1/2 cup unsalted butter – softened
1/2 cup light brown sugar
1/4 cup + 2 tbsp white sugar – powdered / caster sugar
1 egg
1/2 tsp vanilla extract
1/2 cup chocolate chips/ dark chocolate chunks
Directions
- Preheat the oven to 180°.
- To begin with, start by scooping 1 tbsp blobs of Biscoff spread onto a baking paper and leave in the freezer to harden. You should be able to get 6-7 blobs.
- Start by sifting together the flour, cocoa powder, baking powder and salt. Set aside to be used later.
- Whisk together the softened butter along with both the sugars until light and fluffy.
- Add in the egg and vanilla extract and continue whisking until well incorporated.
- Fold in the dry ingredients in two parts into the butter mixture, folding it with a spatula to form a lump-free dough.
- Weigh 40g dough balls. Flatten each dough ball to a small disc and place a piece of the frozen Biscoff in the centre. Cover the Biscoff with the sides of the flattened dough and form into a cirular large ball of dough.
- Gently flatten each stuffed dough ball onto a tray lined with baking paper/silpat. stud the top of the cookie with 3-4 pieces of the chocolate chunks. This cookie will not spread much so be sure to flatten it prior to baking.
- Bake for 8-10 minutes.
- Sprinkle with sea salt and let it cool before you enjoy molten Biscoff goodness.
