These crispy Broccoli Cheese Kebabs make for a perfect tea-time snack. Made from broccoli, cheese, and nuts – It’s an exciting blend making it super yum! This flavoursome kebab is sure to impress both kids and adults, alike. You can serve it with any dip or chutney of your choice. It’s got a perfect balance of texture – crispy on the outside and soft on the inside. If you would like to save on calories, you can air-fry these kebabs too!

Broccoli Cheese Kebabs

2 cups broccoli – blanched florets – grated
1 cup grated cheese – (I used processed cheddar cheese)
2 green chillies – chopped
1 tsp oregano seasoning
1 tsp ginger-garlic paste
1 tsp black pepper
6-7 roasted cashew nuts
2 tbsp roasted peanuts
1 1/2 tbsp corn flour
1 tbsp ghee
1 tbsp vegetable oil
1 tsp salt
Directions
- In a large pan, sauté the grated broccoli along with black pepper, chopped chillies and ginger-garlic paste for 7-10 minutes on low flame. This is done to remove as much of the moisture as possible so you can work with a dry mixture.
- Add in the roasted cashew nuts (roughly chopped) and peanuts to the broccoli mixture. Give this a good mix, you could add more nuts if you like.
- Lastly, add in the cheese, oregano seasoning, salt and corn flour to the broccoli and nuts mixture. Using your fingertips, lightly knead this for 2-3 minutes.
- Add ghee and oil to a frying pan (non-stick pan is preferable).
- Shape the kebabs into small flat cutlets – 2 tbsp worth of mixture should give you a good size.
- Place the kebabs into the pan gently. Let it cook for 3-4 minutes on each side or until golden brown. Wipe the pan each time to remove the brown burnt bits and continue.
- Serve hot with ketchup or hot sauce. Enjoy!
