Super easy melt in your mouth butter biscuits. This is my take on the classic Scottish shortbread, made with only five ingredients. You can customize this recipe by adding chocolate chips, nuts, dried fruit etc. Turn them into a cookie sandwich by stuffing them with Nutella/jam. It is a great base cookie recipe to have and you could get kids to do colourful frosting on them as well. P.S – Trust me when I say MELT IN YOUR MOUTH!

Butter Biscuits (Shortbread)

100 gms unsalted butter – softened
50 gms powdered sugar
150 gms all-purpose flour
Pinch of salt
1/2 tsp vanilla extract
Directions
- Preheat the oven to 160°C and line your baking tray with parchment paper.
- In a large bowl, whisk the sugar, vanilla extract and butter together until smooth and combined.
- Add the flour in two parts. Fold it into the dough with a spatula. Add the salt and mix well. You could form it into a ball with your hands.
- Flour your work surface and roll out the dough to 1/4-inch thickness. The dough will be slightly sticky and fragile but this is normal.
- Using a cookie cutter, cut out discs and lay it on a baking sheet.
- Bake for 15-17 minutes or until the cookies are a pale golden colour. Let it cool completely.
- If you do wish to use these cookies as a cookie sandwich, you could stuff them with Nutella/peanut butter or jam. Enjoy!
