Chocolate Orange Gooey Brownie Pots

60 gms unsalted butter
25 gms salted butter
85 gms semi-sweetened chocolate
48 gms all purpose flour
1 tsp vanilla extract
80 gms castor sugar
1 egg + 1 egg yolk
3 tbsp fresh orange juice
1 1/2 tbsp fresh orange zest (you could add more based on how much of the orange flavour you want)
1/4 cup milk chocolate chunks roughly chopped
Directions
- Preheat the oven to 170°C and butter three circular moulds (The diameter of mine were 4.5- inches). Set aside.
- In a pan, melt the butter until golden brown. This should be done on slow heat, it would take around 5-7 minutes. The browned butter adds a lot of flavour to the brownie.
- In a bowl, add the chopped semi-sweetened chocolate and chopped dark chocolate. Pour over the hot butter on the chocolate and stir. Stir until smooth and combined.
- In a seperate bowl, add the castor sugar and eggs. Whisk until light and thick. Add in the vanilla extract. Whisking the eggs gives it that all-important cracked top. Whisk until it resembles a thick pancake batter. This should take 3-4 minutes.
- Add the melted chocolate and butter mixture to the whisked egg mix. Sift in the flour and stir until combined. At this stage, add in the chopped milk chocolate chunks, orange zest and juice. Mix well.
- Pour into the moulds and bake for 20-23 minutes. Let it cool completely before cutting into squares. Garnish with orange segments and zest. Enjoy!
