Super moist and soft mini chocolate cakes – perfect for dessert!

57 gms unsalted butter
85 gms dark chocolate – roughly chopped
2 tbsp powdered sugar
1 egg + 1 egg yolk
Pinch of salt
1 tbsp all purpose flour
Directions
- Melt the chocolate and butter in a double boiler. Melt until smooth.
- Grease your ramekins/muffin tins (4 nos) with butter and dust with flour. Preheat the oven to 210°C.
- In a bowl, whisk together the egg, egg yolk, sugar and salt until pale and creamy. This can be done by switching to a high speed on the whisk. Set aside.
- Whisk the melted chocolate mixture until fully combined add fold it into the egg mixture with a spatula. Add in the flour and mix well.
- Pour the batter into the pre-greased ramekins/muffin tins and bake for 11-12 minutes.
- Let it cool and dust with some powdered sugar. Enjoy!
