Orange Almond Cake

300 grams – Almond Flour
2 Oranges
A pinch of salt
6 eggs
175 grams – Sugar
1 tbsp – Honey
Directions
- Line a 7-inch cake tin with butter and place parchment paper on the bottom and sides of the tin. Preheat oven to 150°.
- Wash the two oranges and place them in boiling water for 30 mins until soft. Remove the pips (seeds) and fibre from the oranges and puree the orange – skin and fruit. It will turn into a luscious thick orange pulp. Keep aside for later.
- Seperate the six eggs in two different bowls – one for the egg whites and one for the egg yolks.
- Add the sugar and honey to the egg yolks and start whisking – using a hand whisk. It’s crucial to mix the egg yolk and sugar mixture as the sugar can cook the egg yolks.
- Add in the orange pulp and almond flour in batches into the egg and sugar mixture.
- Fold in the the egg whites in four batches slowly folding it into the batter with a spatula , without losing too much of the air.

- Pour the batter into the prepared cake tin and bake for 50 minutes until a toothpick has crumbs on it. Let it cool and enjoy!
