Bring this Vietnamese sandwich to your home. This Paneer Banh Mi Sandwich is a vegetarian twist on the classic. Super yum and easy to make. It’s fresh and vibrant with the addition of the pickled veg and you’ll feel satisfied after consuming this. I’ve used paneer (cottage cheese) as an alternative to the traditional grilled pork/beef. It works as the perfect vehicle to absorb the Asian flavour marinade which packs a punch in this sandwich. What I prefer about this submarine sandwich as opposed to other sandwiches is the freshness. It is SO FRESH- I’ve started adding pickled veggies and coriander leaves to all the sandwiches I make. I hope you love this as much as I do. Happy Cooking 🙂

Banh Mi Sandwich

2 medium-sized carrots
1 cucumber
1 small red onion
2 tbsp vinegar
1 tsp sugar
1 tsp salt
100g cottage cheese (paneer)
1 tbsp soya sauce
1 tbsp schezwan sauce
Juice of 1 lemon
1 tsp ginger-garlic paste
1/2 tsp salt
2 tsp vegetable oil
1 French Baguette Bread / 2 bread roll/ 3 buns
Sriracha sauce/spicy mayonnaise
Fresh coriander leaves for garnish
Directions
- Start by finely shredding the carrots and cucumber into thin strips. Thinly slice the red onions and set them aside.
- For the pickling liquid – In a small bowl, add the vinegar, sugar and salt. Add the sliced vegetables to this mixture. Give it a good mix and let the carrots, cucumbers and onions sit in this mixture for 20 minutes atleast. Set aside to be used later.
- For the sautéed paneer – cut the paneer into 1/4-inch thick strips and prepare the marinade.
- For the marinade – in a small bowl, add in the soya sauce, schezwan sauce, salt, lemon juice and ginger-garlic paste. Add in the sliced paneer and give it a good mix until all the pieces are coated. Let this sit for 10 minutes.
- Heat oil in a pan and add in the marinated paneer pieces one by one. Do not clutter the pan and add in all at once. Let the paneer cook for 3-4 mins on each side on medium flame.
- ASSEMBLY
- Start by slicing the baguette in half lengthwise and spreading the sriracha sauce or any spicy sauce of your preference on the inner base of the bread.
- Next, layer the paneer, and top it up with the pickled carrots, cucumbers and onions. Garnish with fresh coriander leaves.
- Enjoy your super fresh flavourful sandwich!
Notes
- For a non-vegetarian option, add in grilled chicken or beef.
