Popular Indian street food – spicy mashed vegetable curry with warm buttery pav bread to mop it all up.

- FOR THE BHAJI
3 tbsp salted butter
1 1/2 tbsp ginger garlic paste
1 onion – chopped
3 tomatoes – finely chopped
2 potatoes – boiled u0026 mashed
1/4 cup peas – boiled
2 carrots – chopped u0026 boiled
2 tsp salt
2 tsp pav bhaji masala
1/4 tsp turmeric powder
1 tsp red chilli powder
2 tsp kasuri methi (dried fenugreek leaves)
1/2 cup of water
Handful of fresh coriander leaves
1 lemon – cut into half
1 onion – chopped (for serving)
- FOR THE PAV
6 pav bread – cut into half
2 tbsp butter
Directions
- FOR THE BHAJI
- Heat butter in a pan and add in the onions and ginger garlic paste. Once the onions turn golden brown, add in the chopped tomatoes and mix well. Sauté till the tomatoes are soft.
- Add in the chilli powder, turmeric powder and pav bhaji masala. Mix until well combined.
- Add in the boiled vegetables – mashed potatoes, boiled carrots cubes and the boiled peas and stir well. At this stage, add in the water and using a masher, mash all the vegetables. It need not be smooth, but they vegetables should be broken down well.
- Season with salt and add in the dried fenugreek leaves.
- Garnish with coriander leaves.
- FOR THE PAV
- Heat butter in a pan and toast the pav bread. Toast until the pav starts to get slightly brown and crispy.
- Serve the bhaji along with warm buttery pav bread. Best eaten with a squeeze of lemon and chopped onions. Enjoy!
