Most comforting pot of noodles ever – noodles lusciously coated in peanut butter and chilli oil. This bowl of peanut chilli noodles packs a punch with every bite. It’s salty, sweet, crunchy and has all the savoury goodness you can probably imagine. The chilli oil is an essential component of this dish. It’s not too spicy and has a slightly smoky flavour which pairs with the creamy peanut butter so well. It’s perfect for a simple weeknight dinner. You can throw in any vegetable/meat you have in hand – just stir-fry and add them in.

Peanut Chilli Noodles

100 gms dried noodles
3 tbsp sesame oil
1 tbsp soya sauce
1/4 cup chilli oil – check link for recipe above
1/4 cup peanut butter – preferably crunchy – unsweetened
1/2 tsp salt
1/2 tsp white and black sesame seeds – toasted
Spring onions for garnish
Directions
- Boil the noodles until soft – drain and set aside for later.
- The next step is to prepare the chilli oil. To make your own super easy chilli oil – you can search for it on the blog under ‘chilli’ or head to the top of the page where you will find a link to the recipe.
- Once the chilli oil is made, toss the noodles generously in 1/4 cup chilli oil. The oil is not very spicy, add more or less depending on how spicy you like it.
- Add in the soya sauce and peanut butter along with the sesame oil. Give it a good mix making sure each noodle is coated. Season with salt.
- Garnish with black and white toasted sesame seeds and fresh spring onions. Enjoy!

- You may add in vegetables such as sliced mushrooms/carrots/beans or even shredded chicken.
