Spinach Almond Soup

Warm Spinach Almond Soup is all you need on a cold day. It’s also a perfect light weeknight dinner and super easy to whip up. Also, just that vibrant colour of this soup is enough for me to go back for more, not to mention it’s yum! It’s creamy and packed with the healthy goodness of spinach and almonds. I’m not a huge fan of soups, to be honest, it reminds me of something we usually have when we’re sick – but nowadays I’m really starting to enjoy making soups. It’s easy, healthy and light!

Ingredients

  • 2 cups fresh spinach leaves

  • 1/4 cups whole almonds

  • 1/4 cup tbsp full-fat cream

  • 2 tbsp whole milk

  • 1/2 tsp freshly ground pepper

  • Salt to taste

Directions

  • Start by blanching the almonds in hot water for 15 minutes. Set aside.
  • Blanch the cleaned spinach leaves as well in hot water for 5 minutes. Drain (save some water) and add to a blender.
  • Additionally, add in the blanched almonds, cream, milk and a couple of spoons of spinach water.
  • Blend until silky smooth.
  • Heat a saucepan on the stove and add in the blended spinach mixture. Season with salt and pepper.
  • Remove from the stove and pour in the warm soup into bowls.
  • Garnish with cream, olive oil and some slithered almonds.
  • Enjoy with some breadsticks!
